The Cookbook Challenge: Week 3 Hor D’oeuvres Recipe No. 1 – Stuffed mushrooms

While some Cookbook Challengers were having trouble with this theme, I was actually looking forward to it! Well, mostly because I could use one of our cookbooks, Marie Claire Food + Drink. The cookbook was given to hubby as a present 8 years ago and it has never been used! It is one of those “entertaining” cookbooks and is filled with small finger foods and various drink recipes. There were quite a few recipes I want to make but decided on 3 as I didn’t want to spend the whole weekend cooking and there were only 2 of us eating.

I mentioned it on Twitter but thought I should probably say it here too… during the week I got braces fitted to my top teeth to fix my overbite. I will be getting bottom teeth braces too, but only once my top teeth have moved enough to allow bottom braces to fit. This means a change in my eating habits and the types of food I can eat. Anything hard, sticky or chewy is out and I am no longer able to bite into stuff – everything has to be cut with a knife and fork.

There was a bit of an adjustment period where I had to get used to them on my teeth and was only eating soft foods while my teeth were tender. They still are, but I can chew a bit more on my back teeth on one side now. Braces are annoying and a big fat pain the arse, but I might have them on for up to 2 years, so I better get used to them.

In choosing recipes for this week’s challenge, I had to make sure I would be able to eat them. Hor d’oeuvres are meant to eaten as finger food, but I had to put them on a plate and eat them with a knife and fork! It was a pretty funny sight!

The first dish I made was stuffed mushrooms. Since I was making 3 things, I divided all the ingredients in half. I also didn’t manage to get photos of the preparation like I usually do because I was pressed for time!

Stuffed Mushrooms
Makes 9

Ingredients
9 button mushrooms
3 tbsp ricotta cheese
¼ tsp finely chopped fresh rosemary
1 slice of prosciutto, finely sliced – I substituted bacon
1 tsp olive oil
Salt & pepper to season

Method
1.
Preheat the oven to 180C (160 fan forced).

2. Place the ricotta, rosemary, prosciutto and oil in a small bowl and stir to combine. Season well with salt and freshly ground pepper.

3. Remove the stems from the mushrooms and trim their rounded tops with a sharp knife so as to give them a flat base when placed upside down (I didn’t need to cut the base of mine).

4. Spoon the ricotta filling into the centre of the mushrooms and place them on a baking tray.

5. Bake for about 15 minutes.

Results: I was a bit heavy handed with the salt so the stuffed mushrooms turned out a bit salty but they were good anyway. Hubby doesn’t really like the texture of ricotta, but he ate everything in front of him and said he would eat them again!

Would I make it again? Yes, it was easy to make.

Ohmygosh, you made three items – good work! 🙂 The braces sound annoying, but it'll be totally worth it in the end, I'm sure!

I've had that cookbook for ages too, and it's one that I've rarely used. I should have another look at it!

Braces are indeed a pain in the arse, but they are totally and utterly worth the arsepain! I no longer look like the shark I once did 😀

Oh you got braces! Congrats! I just got mine off last Thursday after having them on for 21 months. Its well worth it in the end I can tell you – and you completely forget you've got them after a while. Good luck with them! 🙂

Oh and I never encountered any weirdness from others being an adult with braces so if that's been a concern, dont worry! 😀

I hear your pain with the braces – I had mine on for nearly 3 years! Just avoid apples, they were the one food I could never manage to eat with my braces! And buy some bonjella… the ulcers from braces can be quite painful.
